The best kept secret...it's easy!

If you are a fan of cannoli, you will thank me for sharing the secret of making a great cannoli filling. Cannoli cake is the traditional "special occasion" cake most Italian families use to celebrate and it is especially loved by children of all ages. The bakery cake is very expensive though. If you want to treat your family to a special desert that mimics the bakery cake, here's how...

Yellow Box Cake - purchase any yellow box cake and follow the directions for two layers. Cool and take the layers out of the pans to rest. (Note: If you have a good recipe for yellow cake layers, by all means use it here.)

FILLING :

  • 1 1/4 cups ricotta cheese
  • 4 oz cream cheese
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup mini semi-sweet chocolate chips

Mix all ingredients but chocolate chips until smooth (may use food processor or mixer). Fold in chocolate chips, cover bowl and place filling in refrigerator until cake cools and you are ready to assemble.

To assemble the cake merely turn the first layer upside down, place it on a platter and spread the filling to but not over the edge of this cake layer. Place the second layer over the first layer right side up.

Before serving, take whipped cream or cool whip and add about 3 tablespoons of confectioners sugar to it. Frost the cake with this confection and serve.

You had me at Canolli! We have many Italian bakeries around us that make Cassata cakes. I have never tried to make it before but with this recipe it is a definite on my list. Thanks for sharing your recipe. I am bookmarking it for future use!

Thanks cardelean. You can use this to fill canolli shells or chocolate cake as well.
